Ingredients: 

  • 1 cup dark chocolate chips (70% cocoa or higher) 
  • 1 cup whole almonds 
  • 1 tbsp coconut oil 
  • Sea salt for garnish 

Instructions: 

  1. Melt the dark chocolate and coconut oil together in a microwave or double boiler. 
  2. Stir in the almonds until they’re fully coated. 
  3. Drop spoonfuls of the mixture onto a parchment-lined baking sheet. 
  4. Sprinkle with a pinch of sea salt and refrigerate until set. 

2. Coconut-Date Energy Balls 

Ingredients: 

  • 1 cup pitted Medjool dates 
  • 1/2 cup shredded coconut 
  • 1/2 cup almond butter 
  • 1 tsp vanilla extract 
  • 1 tbsp chia seeds (optional) 

Instructions: 

  1. In a food processor, blend the dates, almond butter, and vanilla until smooth. 
  2. Stir in the shredded coconut and chia seeds if using. 
  3. Roll the mixture into bite-sized balls and refrigerate for 30 minutes to firm up. 

3. Pumpkin Spice Peanut Butter Cups 

Ingredients: 

  • 1/2 cup natural peanut butter 
  • 1 tbsp maple syrup 
  • 1/2 tsp pumpkin spice blend 
  • 1 cup dark chocolate chips 
  • 1 tbsp coconut oil 

Instructions: 

  1. Mix the peanut butter, maple syrup, and pumpkin spice blend together until well combined. 
  2. Melt the dark chocolate and coconut oil together in the microwave or a double boiler. 
  3. Pour a small amount of melted chocolate into silicone muffin cups, followed by a spoonful of the peanut butter mixture, and top with more melted chocolate. 
  4. Freeze for 1 hour before serving.
